Lemon mint cookies

Lemon mint cookies are so delicious! And what a delicious aroma is in the kitchen during its preparation – just a fairy tale! Mint and lemon, besides the aroma, give this liver a pleasant freshness.

The process of making these cookies is quite simple and quick. The only moment, the dough must lie in the freezer for a while before baking.

Ingredients:

  • Wheat flour – 300 gr.
  • Butter – 100 gr.
  • Sugar – 100 gr.
  • Powdered sugar – 5 tbsp.
  • Chicken egg – 1 pc.
  • Medium lemon – 1 pc.
  • Fresh mint – 15 gr.
  • Baking powder – 1 tsp
  • Salt – a pinch

Cooking process

1 Thoroughly wash and dry the lemon and mint.

Rub the zest from one lemon on a fine grater.

Grind the mint leaves. I do it in a mortar. You can also use a blender.

2 In a bowl, combine chopped mint, lemon zest, 2 tablespoons lemon juice and sugar. Add an egg to them. Beat all a few minutes with a mixer. Add softened butter there and continue to mix with a mixer. It is desirable to add high-quality butter, 82% fat.

3 Add sifted flour, baking powder and salt to our mixture. Mix everything well. Knead soft dough. It shouldn’t stick to your hands.

We wrap the resulting dough in cling film. And we put it in the freezer for at least an hour. If you have time, then it is better to leave the dough there for a few hours. In this case, there will be more spectacular cracks on the finished cookie.

4 We take out the chilled dough from the freezer. Let’s start forming the cookies. Divide the whole dough into 20 pieces. Roll a ball from each piece. It turns out to be the size of a large walnut.

Pour the icing sugar into a plate. Roll each ball on all sides in powdered sugar.Put the resulting balls on a baking sheet covered with baking paper. Be sure to leave a distance of 3-4 cm between the cookies!

We send the baking sheet to an oven preheated to 180 degrees for 20 minutes.

5 Cool the finished cookies. The most convenient way to do this is on the wire rack.
