Muffins with cheese and mushrooms

Going to a picnic? Or do you think what would be so delicious to cook for breakfast? Or just want to have a snack? I suggest you prepare snack muffins with cheese and mushrooms according to this recipe. Cooking them is quite simple and quick.

Ingredients (for 6 pieces):

  • Wheat flour all purpose – 120 gr.
  • Cream 10% fat – 75 ml.
  • Chicken eggs – 1 pc.
  • Butter – 20 gr.
  • Baking powder – 0.5 tsp
  • Onions – 0.5 pcs.
  • Champignons – 50 gr.
  • Suluguni cheese – 50 gr.
  • Brie cheese (optional) – 30 gr.
  • Dor Blue cheese (optional) – 20 gr.
  • Salami sausage – 20 gr.
  • Vegetable oil
  • Greens – any to taste
  • Salt

Cooking process

1 Let’s start by making the filling.

Cut the onion into small cubes. We put it in a preheated pan with a mixture of butter and vegetable oils. Fry the onion until light golden brown.

Wash the mushrooms thoroughly. We cut them into slices. Add the mushrooms to the onion pan and fry everything together until golden brown.

2 Grate Suluguni cheese on a coarse grater. Cut the salami, Brie and Dor Blue cheeses into small pieces. Also shred greens (I add different types of greens: dill, parsley, chives).

3 Let’s make a dough for our muffins.

Stir the cream, egg and softened butter until smooth. Add filling to them. Mix everything carefully.

Any filling can be added to your liking. So fresh herbs can be replaced with dried ones. Oregano or basil will go well with cheese. Suluguni cheese can also be substituted for any other Gouda type cheese. The sausage can be replaced with pieces of chicken (pre-cooked), etc.

Sift flour into the resulting mixture, add baking powder. Mix everything well. In this case, the filling should be evenly distributed over the dough.

Put the resulting dough into molds. Fill the molds 2/3 full or slightly larger.

4 Put the tins with the dough in the oven preheated to 190 C (375 F)degrees. Bake the muffins for 25 minutes.

These snack muffins are best eaten lightly chilled. I leave the cupcakes to cool on the wire rack.
