Lahmacun – oriental pizza

Lahmacun is an oriental dish. It is also called Turkish or Arabic pizza. It is a thin cake made from yeast dough stuffed with minced meat, tomatoes and onions.

Ingredients:

Yeast dough
  • All-purpose flour – 400 gr.
  • Water – 300 ml.
  • Dry yeast – 1 tsp
  • Sugar – 1 tsp
  • Salt – 1 tsp
Filling
  • Beef – 450 gr.
  • Pork – 250 gr.
  • Onions – 2 pcs. ( medium size)
  • Tomatoes in their own juice – 1 can (380 gr.)
  • Cheese (optional) – 100 gr.
  • Milk – 30 ml.
  • Vegetable oil – 2 tbsp. spoons
  • Chili sauce or adjika (optional) – 1 tsp
  • Parsley (or other herbs)
  • Lettuce leaves
  • Ground zira – 0.5 tsp
  • Ground coriander – 0.5 tsp
  • Pepper – a pinch
  • Salt

Cooking process

1 First of all, let’s prepare the dough.

Pour flour, yeast, salt and sugar into a bowl. Pour warm water and knead the dough. The dough should not be very tight and stick slightly to your hands. Form a ball out of the dough and put it in a greased bowl. Cover the bowl with a towel. Leave it in a warm place for 1-1.5 hours.

2 While the dough is proving, prepare the filling.

Scroll the meat through a meat grinder. Chop the onion finely.

Put the onion in a preheated pan with vegetable oil and fry it for 5-7 minutes. Add minced meat to the onion and fry everything together for 10 minutes. After this time, add chopped tomatoes to the pan. Now you can add adjika for piquancy (or chili). Add all the spices and salt. Mix well and simmer for 10 minutes.

3 Put the risen dough on a floured surface and knead it for a couple of minutes. It should become a smooth ball. We divide this ball into two or four parts.

Roll out each part in the form of a circle or square.

Transfer the cake to baking paper.

Grease the surface of each cake with milk.

4 Spread the filling. Top, if desired, you can sprinkle with more grated cheese. In the original recipe, the dough and the filling layer are quite thin, but I like to add more filling. Therefore, the minced meat is already prepared in advance, and not raw.

Shift the cake to a preheated baking sheet. We put it in an oven preheated to 220 C(430 F)degrees. Bake for 10-15 minutes. The baking time depends on the thickness of the dough.

Sprinkle the finished Lahmacun with chopped parsley or other herbs (to taste). Alternatively, you can add whole lettuce leaves. Sprinkle lightly with lemon juice.

Usually Lahmacun is served rolled up. It is convenient to take such a roll with you to work or a picnic.
