Chicken Tikka Masala with Paratha

Chicken Tikka Masala is a famous Indian dish. It is a thick and very rich sauce with pieces of chicken. Most often served with Indian flatbread or rice. There are many varieties of this dish. I love the recipe I saw in the book of famous chef Jamie Oliver. I am happy to share them with you.

Chicken Tikka Masala

Ingredients:

  • Chicken fillet (or chicken thighs) – 800 gr.
  • Natural yogurt – 6 tbsp.
  • Lemon – 0.5 pcs.
  • Ginger root – 5 cm.
  • Garlic – 6 cloves
  • Garam Masala – 1 tsp
  • Smoked paprika – 1 tsp
  • Ground cumin – 1 tsp
  • Ground cloves – 1 tsp
  • Chili pepper – optional
For sauce
  • Onion – 2 pcs.
  • Garlic – 4 cloves
  • Tomatoes in own juice – 2 cans (800 gr.)
  • Coconut cream – 200 ml. (or 2 cans of 800 ml coconut milk)
  • Broth (or water) – 500 ml.
  • Ground almonds – 6 tbsp.
  • cilantro – 1 bunch
  • Ground coriander – 1 tbsp.
  • Turmeric – 2 tsp
  • Smoked paprika – 1 tsp
  • Garam Masala – 1 tsp
  • Chili pepper – 1 pc. (optional)
  • Olive oil

Cooking process

1 First, marinate the chicken.

Fry cloves, cumin, paprika and garam masala in a pan for a minute. Add these fragrant seasonings to yogurt. We also add chopped garlic, ginger root, grated zest and juice of 0.5 lemon there. Salt. Mix thoroughly. Rub the chicken pieces with the resulting marinade. Place the chicken in the refrigerator to marinate for 2 hours.

2 While the chicken is marinating, prepare the sauce.

Chop the onion, garlic, cilantro stems and chili peppers. Fry everything in a preheated pan until golden brown, stirring occasionally.

Add smoked paprika, coriander, turmeric and garam masala to the pan. Mix. Fry for 2 minutes over medium heat. Add chopped almonds. Fry for a couple more minutes.

Reduce fire. Add tomatoes to the pan, stir. Simmer for 5 minutes. Pour in the coconut cream diluted with water (or broth). Simmer for 20 minutes, stirring occasionally. Salt to taste.

3 Thread marinated chicken pieces on skewers. Fry them on both sides until golden brown.

Remove the chicken from the skewers and add to the sauce. Simmer together for another 2 minutes. I sometimes skip this stage and serve chicken on skewers separately and sauce separately. This presentation looks very impressive.
