Italian salad with apricots and mozzarella

I have a wonderful book by famous chef Jamie Oliver “Italy”. I want to share with you the salad recipe from this book. This Italian salad with apricots captivated me not only with its spectacular appearance, but also with an interesting combination of products, colors and textures.

Italian salad with apricots and mozzarella

Ingredients:

  • Apricots – 5-6 pcs.
  • Mozzarella – 100 gr.
  • Dry-cured ham – 50 gr.
  • Red onion – 1/2 onion
  • Lettuce leaves
  • Arugula
  • Thyme (fresh or dried) several sprigs
  • Lemon (zest)
  • Olive oil – 3 tbsp
  • Wine vinegar – 1-2 tbsp
  • Pink peppercorns (or black)

Cooking process

Wash the apricots, remove the pits and cut them in half. Mix thyme with a spoonful of olive oil. Drizzle this mixture over the apricots.

Place the apricots cut side down in the hot skillet. Fry over high heat for 5-6 minutes – until golden brown. Turn over and fry for a few more minutes.

Wash and dry the arugula and lettuce. Put them on a plate. Place caramelized apricot halves on top.

Italian salad with apricot

Cut the onion into thin half rings. Mix olive oil (2 tablespoons) with vinegar. Add the onion and ground pink peppercorns to the mixture. Stir and leave the dressing for a couple of minutes.

Break the mozzarella into pieces. Cut the cured ham into thin slices. Add them to the apricots.

Pour salad dressing over everything.
