Carrot and fennel salad

Let’s prepare something refreshing and delicious! This healthy carrot and fennel salad combined with a special dressing made from olive oil, orange juice, and honey, will be a bright and aromatic addition to your lunch or dinner. It takes just five minutes to prepare.

Carrot and fennel salad

Ingredients (for 2-3 servings):

  • Carrot – 1 pc.
  • Fennel – 1/2 bulb (white part)
  • Iceberg lettuce – a handful or two
  • Olive oil – 3 tbsp
  • Juice from half an orange
  • Whole grain mustard – 1 tsp
  • Honey – 1 tsp
  • Salt

Cooking process

Shred the iceberg lettuce into small pieces.

Peel and grate the carrot using a coarse grater.

Slice the fennel into thin half-moons.

Mix the sliced vegetables together.

Salad dressing: Mix freshly squeezed orange juice (from half an orange) with olive oil, honey, and French mustard.

Drizzle the salad with the prepared dressing.
