Gazpacho Soup

Today I want to share the recipe for the most summer soup. Gazpacho soup is a classic Spanish dish. It is a cold soup with fresh tomatoes as the main ingredient. Sweet peppers and cucumbers are also added to it. It is very refreshing and healthy, because vegetables are not subjected to any heat treatment.

Ingredients (for 3-4 servings):

  • Tomatoes – 800 gr.
  • Tomato juice – 400 ml.
  • Sweet bell pepper – 1 pc.
  • Cucumbers – 2 pcs. small size
  • Onions – 1 pc. medium size
  • Garlic – 3 cloves
  • Wine vinegar – 3 tbsp
  • Olive oil – 3 tbsp
  • Tabasco sauce – 5 drops (or a pinch of hot pepper)
  • Fresh basil – 1 tbsp
  • Ground black pepper – a pinch
  • Salt to taste
For croutons
  • Ciabatta (or baguette) – 1 pc.
  • Olive oil – 1-2 tbsp.
  • Dried basil – 0.5 tsp
  • Dried oregano – 0.5 tsp
  • Salt

Cooking process

1 Peel tomatoes and cucumbers. Remove the seeds from the pepper. Cut tomatoes, cucumbers, peppers, onions and garlic into small cubes.

Put all the prepared vegetables and basil in the bowl of a blender. Pour olive oil, wine vinegar and Tabasco sauce.

Grind everything to a puree state. At the end, add tomato juice, salt and mix well.

Chill the soup very well before serving. It is best to leave it in the refrigerator for a few hours.

2 Croutons are often served with gazpacho soup. I suggest making you delicious homemade croutons. I usually make them from Ciabatta. From it, croutons are made lighter and more airy.

Cut the bread into 1 * 1 cm cubes. Fry the bread in a dry frying pan until golden brown. Pour the finished croutons evenly with olive oil and sprinkle with ground basil and oregano.

3 Serve chilled gazpacho soup with herbs and croutons. You can add a few ice cubes to the plate if you like.
