Berry cake

About this berry cake can be said in two words: “simple and tasty”. The preparatory stage of cooking this cake takes only 10 minutes. And it is prepared from the simplest ingredients that you always have at home.

Ingredients (for form d 22 cm.):

  • Wheat flour – 250 gr.
  • Sugar – 170gr. (if you like it sweeter, you can add a 200 gr.)
  • Chicken eggs – 3 pcs.
  • Butter – 50 gr.
  • Kefir (1.5-2.5%) – 250 ml.
  • Baking powder – 2 teaspoons (or 1 teaspoon of baking soda)
  • Berries (blueberries or currants) – 300 gr.

Cooking process

1 The berries must be washed beforehand so that they are already dry when you put them in the dough. Excess moisture to anything. For the same reason, it is better to add a whole berry to this pie and not very watery. Blueberries, bilberries, black or red currants work well.

2 Prepare the dough. Beat eggs with sugar with a mixer (or whisk). Add melted and cooled butter. Continuing to whisk, pour kefir. Sift flour, add baking powder. Mix everything well until smooth.

Cover the cake pan with parchment paper. Pour the dough into it. Gently lay the berries on top of the dough.

Put the cake pan in an oven preheated to 180 C(365F) degrees. Bake for 1 hour 10 minutes (this is the cooking time for the amount of dough indicated in the recipe, poured into a cake pan with a diameter of 22 cm). The readiness of the cake can be checked with a wooden skewer – it should come out dry, without pieces of raw dough.

The finished berry cake is soft, tender, slightly moist and moderately sweet.

Cool the cake completely before serving.

Sprinkle with icing sugar on a chilled cake. Also, a ball of creamy ice cream will be in place.
