Zucchini and Carrot Salad

Zucchini Carrot Salad

Ingredients (for 2-3 servings):

  • Zucchini – 1 (or 2 small ones)
  • Carrot – 1
  • Feta cheese – 50 g
  • Handful of walnuts
  • Lemon (zest + juice) – 1 small
  • Garlic – 1 clove
  • Ground coriander – 1/2 tsp
  • Dried basil – 1/2 tsp
  • Olive oil
  • Ground black pepper
  • Salt

Cooking process

Peel the zucchini and, using a vegetable peeler, slice them into thin elongated slices.

Peel the carrot and also slice it into long thin slices.

Place the zucchini and carrot in a deep bowl. Add the zest and juice of one lemon, a clove of garlic, ground coriander, and salt. Mix well and let it sit for 15-30 minutes. During this time, the vegetables should absorb all the flavors and become more tender.

Put the zucchini and carrots on a plate, removing any excess liquid. Then add diced (or crumbled) Feta cheese, chopped walnuts, and sprinkle with dried basil. All that’s left is to dress the salad with olive oil.

Finish the zucchini and carrot salad with a sprinkle of freshly ground black pepper.
