Tuna avokado salad

Tuna avokado salad is a tasty, healthy, nutritious and high protein dish. Thanks to the avocado, this salad has a nice creamy texture. And freshness is brought in by onions, herbs and lemon juice.

Ingredients (for 2 person):

  • Tuna canned in its own juice – 1 can (120 gr.)
  • Avocado – 1 pc.
  • Eggs – 2 pcs.
  • Red onion (or white “sweet” onion) – to taste
  • Sunflower microgreens (or any other green of your choice)
  • Lemon juice
  • Olive oil
  • Ground black pepper
  • Salt

Cooking process

Boil the eggs hard boiled (cook 7-8 minutes after boiling). Cool, peel and cut into small cubes.

It is desirable to add a softer onion. For example, white “sweet” onions, which do not have pronounced bitterness, are perfect. You can also add red onion. I recommend pickling it. Cut the onion into thin half rings. Pour it with lemon juice or wine vinegar. Let marinate for 5 minutes. As a result, the onion acquires a slight sourness and unpleasant bitterness disappears.

Avocado cut into cubes.

Wash sunflower microgreens or any other greens and dry.

Drain liquid from canned tuna. Mash (or break) the pieces of tuna with a fork. Add it to the rest of the ingredients.

Gently mix all the ingredients. Salt as needed. Dressing tuna avokado salad olive oil and lemon juice. Sprinkle with freshly ground black pepper.
